Instructions

Step 1: Roasting the Kulith and Sesame Seeds

  1. Begin by roasting the kulith (horsegram) in a pan over medium heat. Stir frequently until it turns a golden-brown color. Once done, remove it from the heat and set it aside to cool.

  2. In the same pan, add the sesame seeds. Roast them lightly until they become fragrant and slightly toasted. Be careful not to burn them. Once done, set them aside as well.

Step 2: Roasting the Spices

  1. In a separate pan, heat 2 teaspoons of oil over medium heat. Add the toor dal, chana dal, fenugreek seeds, and coriander seeds to the hot oil. Stir and roast them for about 2 minutes, until they begin to turn golden.

  2. Now, add the dried red chillies, small onions, garlic, and tamarind to the pan. Continue cooking for another 1 minute, stirring occasionally to ensure nothing burns. Once done, turn off the heat and let the mixture cool.

Step 3: Grinding the Chutney

  1. Once the roasted mixture has cooled, transfer it into a mixer grinder. Add the roasted kulith and sesame seeds to the grinder as well. Add salt to taste. Grind everything together into a smooth or coarse paste, depending on your preference.

  2. Once ground, transfer the chutney into a bowl and set it aside.

Step 4: Tempering the Chutney

  1. For the tempering (tadka), heat a small pan over medium heat and add 1 teaspoon of oil. Once the oil is hot, add the mustard seeds. Let them crackle for a few seconds.

  2. Next, add the chana dal, urad dal, and cook them until they turn golden brown.

  3. Add the curry leaves to the tempering and cook for an additional 10 seconds, letting the aroma release.

Step 5: Mixing the Chutney

  1. Pour the tempering over the prepared chutney and mix well to combine all the flavors.
