Instructions

1. Prepare the Cashews and Raisins

  • Heat 2 tablespoons of ghee in a kadai (wok) over medium heat.
  • Once the ghee is hot, add the chopped cashews and raisins. Fry them until the cashews turn golden brown and the raisins swell up.
  • Remove them from the ghee and set them aside on a plate.

2. Roast the Gram Flour (Besan)

  • In the same kadai, add 1 cup of gram flour (besan) and roast it on low to medium heat.
  • Stir continuously until the flour turns a light brown color and a pleasant, nutty aroma fills the kitchen. This usually takes about 5-7 minutes.
  • Once roasted, transfer the flour to a bowl and sift it using a sieve to ensure it is free of lumps.

3. Prepare the Khurchan-Mawa Mixture

  • In the same kadai, heat 1 cup of khoya (mawa) on low heat. Stir it until it softens and loosens.
  • Add 1/2 cup of condensed milk and 1/2 cup of sugar to the khoya, stirring constantly to combine.
  • Once the mixture is well blended, add 1 teaspoon of cardamom powder and stir to infuse the aromatic flavor.
  • Gradually add the sifted roasted gram flour (besan) mixture to the khoya, stirring vigorously to prevent any lumps from forming. Keep stirring until the mixture thickens and begins to form a cohesive lump.

4. Combine Everything

  • Once the flour and khoya mixture has come together, turn off the heat.
  • Add the previously fried cashews and raisins into the mixture, stirring gently to distribute them evenly.
  • If desired, add some edible silver foil (Chandi Ka Vark) for decoration, giving the burfi an elegant touch.

5. Set the Burfi

  • Grease a flat tray or pan with a little ghee and spread the mixture onto it. Use a spatula to press the mixture down evenly and flatten it into a thick layer.

6. Cut into Pieces

  • Once the burfi has set and is firm to the touch, cut it into desired shapes—squares, diamonds, or rectangles.
