Instructions

  1. Prepare Jaggery Syrup:
In a small saucepan, combine the jaggery with 1/4 cup of water. Heat on a low flame, stirring occasionally until the jaggery dissolves completely, forming a syrup. Remove from heat and let it cool slightly.

  2. Combine Ingredients:
In a mixing bowl, mash the ripe bananas thoroughly until smooth. Add the rice flour, all-purpose flour, dry ginger powder, cardamom powder, ground cashew nuts, and a pinch of salt. Pour in the jaggery syrup, followed by 1 cup of water, and mix everything together until you achieve a thick, smooth batter with a consistency similar to pancake batter.

  3. Heat the Pan:
Heat a nonstick pan over medium heat and add a small amount of ghee to coat the surface.

  4. Cook the Dosas:
Once the pan is hot, pour a ladleful of batter onto the pan, gently spreading it into a small, round dosa (or pancake). Cook each dosa for about 2 minutes on one side until bubbles start to form and the edges begin to lift. Carefully flip it over and cook for an additional 2 minutes, or until golden brown. Repeat with the remaining batter, adding ghee as needed.

  5. Serve:
Serve the Kerala Style Banana Dosa warm. These dosas are delicious with a side of refreshing buttermilk or a chilled glass of Mango Lassi.

Tips for Perfect Banana Dosa

  • Banana Ripeness: For the best flavor, use ripe bananas as they add natural sweetness and a softer texture to the dosa.
  • Consistent Heat: Keep the pan over medium heat. If the pan is too hot, the dosa may burn on the outside while remaining uncooked inside.
  • Varying Thickness: You can adjust the thickness of the batter by adding a little extra water if you prefer thinner dosas.

Enjoy these tender, fragrant dosas as a delightful dessert or a sweet snack that captures the heart of Kerala’s rich culinary tradition!
