  1. Prepare the Poha:

    In a pan or kadai, heat 1 tablespoon of oil over medium heat. Once the oil is hot, add 1/4 teaspoon of asafoetida (hing), 1 teaspoon of mustard seeds, 1 teaspoon of cumin seeds, and 1 teaspoon of split black urad dal. Sauté these ingredients until the dal turns a golden brown, releasing a fragrant aroma.

  3. Add Vegetables and Aromatics:
    To the pan, add 1 sprig of curry leaves, 1 finely chopped onion, 2 finely chopped green chilies, and 1-inch piece of finely chopped ginger. Cook the mixture until the onions turn soft and translucent.

  4. Spice it Up:
    Sprinkle 1/4 teaspoon of turmeric powder into the pan, and stir to combine all the spices and vegetables.

  5. Add Poha:
    Add the washed poha to the pan, and mix gently so that the poha is coated with the spices and vegetables. Make sure everything is well combined.

    Cover the pan with a lid and allow the poha to cook for 2 to 3 minutes on low heat. This step helps the poha to absorb all the flavors of the spices and vegetables.

    Turn off the heat and drizzle 1 teaspoon of lemon juice over the upma. Garnish with 2 tablespoons of roasted peanuts and 4 sprigs of finely chopped fresh coriander.
