Yellow Fenugreek Seeds 1/4 teaspoon
Asafoetida (Hing) 1/4 teaspoon

Instructions

  1. Prepare the Vegetables and Ingredients
    Begin by preparing all the vegetables—peel and chop the bottle gourd, sweet potatoes, and carrots into 1/2-inch cubes. Cut the drumsticks into 1-inch pieces and slit the green chilies. Keep the tamarind water ready, along with the jaggery, turmeric powder, and rice flour. Set these ingredients aside.

  2. Cook the Vegetables in a Pressure Cooker
    Place all the chopped vegetables and the green chilies into a pressure cooker. Add 1 cup of water, salt, and 1/2 teaspoon of turmeric powder. Close the lid and cook on medium heat for 3 whistles. Turn off the heat and immediately release the pressure by lifting the pressure valve with a fork or running cold water over the cooker.

  3. Prepare the Tamarind Mixture
    In a mixing bowl, combine the tamarind water, rice flour, remaining turmeric powder, and red chili powder. Stir well to make a smooth, lump-free mixture. Set this aside.

  4. Tempering the Stew
    Heat sunflower oil in a large wok or saucepan over medium heat. Once the oil is hot, add the mustard seeds and yellow fenugreek seeds. Allow them to crackle for a few seconds. Then, add the asafoetida (hing) and curry leaves. Sauté for a few seconds to release the flavors.

  5. Combine and Simmer
    Add the prepared tamarind mixture to the tempered spices in the wok. Stir well to combine. Next, add the cooked vegetables along with any remaining liquid from the pressure cooker. Mix everything thoroughly.
