Instructions:

  1. Prepare the Biryani Masala:

    • Start by making the biryani masala paste. In a mixer grinder (such as the Zodiac Mixer Grinder), grind the onion, garlic, ginger, and green chilies into a smooth paste. Using the small jar is ideal for smaller quantities of masala.
  2. Cook the Masala in Preethi Electric Pressure Cooker:

    • Set your Preethi Electric Pressure Cooker to “Gravy” mode. Heat some sunflower oil inside the cooker. Add the ginger-garlic paste to the hot oil and sauté for a couple of minutes until the raw smell disappears.
  3. Add Whole Spices:

    • Once the paste is sautéed, add the whole spices—cloves, cinnamon stick, bay leaves, and cardamom pods. Stir them for a minute to infuse their flavors into the masala.
  4. Add Spice Powders:

    • Sprinkle in the turmeric powder, red chili powder, and coriander powder. Stir to combine, allowing the spices to bloom in the oil and masala mixture.
  5. Tomato Puree:

    • Add the tomato puree to the mixture, stirring well. Let it cook for about 2 minutes until the oil separates slightly from the masala.
  6. Add Vegetables and Rice:

    • Now, add the diced green beans, carrots, potatoes, and basmati rice into the cooker. Stir everything together, making sure the rice is coated with the masala.
  7. Add Liquid and Mint:

    • Pour in 1.5 cups of water and salt to taste. Add the chopped mint leaves for that refreshing herbal flavor that complements the biryani beautifully. Stir everything together.
  8. Cook the Biryani:

    • Lock the lid of the electric pressure cooker in place. Set it to “Biryani Mode” and wait for the timer to set itself, which will cook the biryani to perfection.
    • If you’re using a regular pressure cooker, simply close the lid and cook for about 3-4 whistles. Then, turn off the heat and let the pressure release naturally.
  9. Finishing Touches:

    • Once the Preethi Electric Pressure Cooker switches to “Keep Warm” mode, allow the pressure to release naturally. Once the pressure is fully released, open the lid and gently fluff the vegetable biryani with a fork to mix the rice and vegetables.
  10. Serve:

    • Transfer the biryani to a serving bowl and garnish with additional mint leaves if desired. Serve hot with your choice of sides like Hyderabadi Bagara Baingan, Hyderabadi Mirchi Ka Salan, or a cooling raita.

Serving Suggestions:

  • Serve this flavorful One Pot Vegetable Biryani with a refreshing cucumber raita or tangy yogurt dip for a complete meal.
  • Pair it with side dishes like Hyderabadi Bagara Baingan (eggplant curry) or Mirchi Ka Salan (chili curry) to elevate the meal further.

Tips:

  • Rice: Ensure the rice is rinsed thoroughly before cooking to prevent the grains from being sticky.
  • Vegetables: You can adjust the vegetables according to your preference. For example, adding peas or cauliflower works wonderfully in this dish.
  • Regular Pressure Cooker: If you don’t have an electric pressure cooker, a traditional stovetop pressure cooker works just as well. Just follow the same procedure, but cook for 3-4 whistles, then let the pressure release naturally.

This One Pot Vegetable Biryani is a quick and convenient option for a hearty lunch or dinner. The Preethi Electric Pressure Cooker makes the entire process much easier while keeping the flavors intact. Whether you’re serving it to your family or guests, this dish promises to be a crowd-pleaser every time! Enjoy the wholesome goodness of fresh vegetables and aromatic spices in every bite!
