Keerai Vadai Recipe Made with Figaro Pure Olive Oil

Ingredients

Instructions

  1. Soak the Chana Dal
    Begin by soaking the chana dal (bengal gram) in water for about 1 to 2 hours. Make sure it softens sufficiently for blending.

  2. Prepare the Vadai Mixture
    After soaking, keep aside a tablespoon of the soaked chana dal for texture. Add the remaining soaked dal to a blender along with chopped green chillies, onions, cumin seeds (jeera), garlic, ginger, and salt. Blend everything into a very coarse paste. Ensure that the paste is not too smooth, as the texture of the vadai depends on the coarseness.

  3. Mix the Ingredients
    Transfer the coarse paste into a mixing bowl. Add the finely chopped spinach and the reserved tablespoon of soaked chana dal. Mix everything thoroughly until the ingredients are well incorporated.

  4. Heat the Oil
    Heat the Figaro Pure Olive Oil in a deep frying pan over medium heat. To test if the oil is ready, drop a small amount of the vadai mixture into the oil. If it sizzles and rises to the surface, the oil is hot enough for frying.

  5. Shape the Vadai
    Take approximately one tablespoon of the mixture in your hands. Gently shape it into a round ball, then flatten it lightly to form a small disc-like shape. Be sure not to make it too thin, as a thicker vadai will hold its shape better during frying.

  6. Fry the Vadai
    Drop the shaped keerai vadai into the hot oil. Fry them in batches, making sure not to overcrowd the pan. Fry until the vadai turns golden brown and crispy, which should take about 3-4 minutes per batch. Once done, remove the vadai from the oil and place them on a kitchen towel to absorb any excess oil.

  7. Serve and Enjoy
    Serve the hot and crispy Keerai Vadai with Dhaniya Pudina Chutney and Coconut Chutney. For the perfect tea-time snack, pair it with a steaming cup of coffee. Enjoy this South Indian delicacy that’s both crispy and flavorful!
