Instructions

1. Prepare the Yakisoba Noodles

Start by boiling the yakisoba noodles. If you’re unable to find yakisoba noodles, you can use Maggi noodles (just discard the Maggi masala).

  • In a saucepan, bring water to a boil. Add 1 teaspoon of oil and a pinch of salt to the water.
  • Once the water reaches a rolling boil, add the yakisoba noodles and cook for 4-6 minutes on medium heat. Be careful not to overcook them—aim for the noodles to be just tender.
  • Once the noodles are done, turn off the heat and drain them in a sieve.
  • Rinse the noodles with cold water to stop the cooking process. Drizzle a little oil over the noodles and gently toss to prevent them from sticking together. Set aside.

2. Cook the Chicken

  • In a shallow frying pan, heat 1 teaspoon of sunflower oil over medium heat.
  • In a mixing bowl, coat the chicken strips with salt and cornflour. Toss well to ensure they are evenly coated.
  • Add the chicken to the pan and cook, stirring occasionally, for about 5 minutes, until fully cooked.
  • Once the chicken is done, sprinkle with black pepper powder and stir to combine. Transfer the cooked chicken to a bowl and set aside.

3. Make the Yakisoba Sauce

In a small mixing bowl, combine the following ingredients to make the yakisoba sauce:

  • Soy sauce
  • Red wine vinaigrette
  • Brown sugar (Demerara sugar)
  • Worcestershire sauce
  • Chopped green chili
    Mix well and set aside.

4. Stir-Fry the Vegetables

  • In a wok, heat 1 tablespoon of sunflower oil over medium heat.
  • Add the sliced onion and sauté for 2-3 minutes, or until the onion becomes translucent.
  • Next, add the julienned carrots, cabbage, and quartered button mushrooms to the wok. Stir-fry on high heat for about 3-4 minutes. The mushrooms should cook through, and the vegetables should remain crisp.

5. Combine Noodles and Chicken

  • Add the yakisoba sauce to the vegetables in the wok, stirring to coat the vegetables in the flavorful sauce.
  • Add the cooked yakisoba noodles and toss everything together gently to combine, ensuring the noodles are well coated with the sauce and vegetables.
  • Add the cooked chicken back to the wok and toss everything once again. Taste and adjust the seasoning with salt and pepper as needed.

6. Serve

Transfer the Chicken Yakisoba to a serving bowl. Serve hot, alongside a dish like Teriyaki Chicken or a delightful dessert such as Japanese Cotton Cheesecake for a complete Japanese-inspired meal.

This Chicken Yakisoba recipe is sure to become a family favorite. The rich, savory flavors of the chicken and vegetables pair perfectly with the chewy yakisoba noodles, creating a dish that’s satisfying yet light. Whether you’re enjoying it for a weeknight dinner or sharing it with friends and family, this Japanese noodle recipe brings an authentic taste of Japan into your kitchen. Enjoy!
