Instructions

Step 1: Cooking the Ziti Pasta

  1. Begin by bringing a large saucepan of water to a boil. Add 1 teaspoon of salt to the water.
  2. Add the ziti pasta and cook until al dente, which will take about 12-15 minutes.
  3. Once cooked, drain the pasta and rinse under cold water to stop the cooking process. Drizzle a little olive oil over the pasta to prevent it from sticking together. Set aside.

Step 2: Roasting the Mushrooms and Corn

  1. Heat 2 teaspoons of extra virgin olive oil in a shallow frying pan over medium-high heat.
  2. Add the sliced button mushrooms and sauté until they are tender and browned, about 5-7 minutes.

  4. Add 2 tablespoons of water to the pan and bring the sauce to a brisk simmer. Allow it to cook for about 5-7 minutes, until the sauce thickens slightly.
  5. Taste the sauce and adjust the seasoning with additional salt or pepper if needed.

Step 4: Combining the Pasta and Vegetables

  1. Add the cooked ziti pasta to the sauce, followed by the roasted mushrooms and corn.
  2. Toss everything together for about 3-4 minutes to ensure the pasta and vegetables are evenly coated in the sauce.
  3. Turn off the heat and stir in half of the shredded mozzarella cheese until it melts into the pasta.

Step 5: Baking the Ziti

  1. Preheat your oven to 180°C (350°F).
  2. Transfer the pasta mixture into a large baking dish or individual ramekins for single servings.
