Instructions

  1. Steam the Green Beans: Begin by steaming the green beans for about 4-5 minutes until they are tender yet still have a nice crunch. Allow them to cool down completely.

  2. Toast the Coconut: In a small pan, lightly toast the desiccated coconut over low heat. Stir for about a minute, or until the coconut turns a light brown. Remove from heat and let it cool.

  3. Prepare the Tadka: Heat sunflower oil in a heavy-bottomed pan. Once the oil is hot, add the mustard seeds and let them splutter. Then, add the cumin seeds and sauté for a few seconds until fragrant. Add the dry red chillies and sauté for another few seconds. Remove the pan from the heat and add the asafoetida (hing) and curry leaves to the hot oil, allowing the flavors to infuse.

  4. Combine the Ingredients: In a mixing bowl, combine the steamed green beans with the toasted coconut. Pour the prepared tempering (tadka) over the beans. Add salt and lemon juice, and toss everything together until evenly mixed.

  5. Rest the Salad: Let the salad sit for about 30 minutes to allow the flavors to meld and intensify.

  6. Garnish and Serve: Garnish with slivered almonds before serving. This will add a crunchy, nutty texture to the salad.
