Rava Pongal is a popular South Indian dish that’s perfect for a hearty breakfast. It’s a savory dish made with rava (semolina), moong dal (yellow split lentils), and a variety of aromatic spices. The combination of toasted rava, cooked dal, and flavorful tempering creates a comforting, savory meal, often enjoyed with coconut chutney or sambar. Whether you’re looking for a nourishing start to your day or craving a comforting snack, Rava Pongal is the perfect choice. Let’s dive into the recipe!

Ingredients

Ingredient Quantity
Yellow Moong Dal (Peeled) 1/2 cup
Rava (Semolina) 1 cup
Ghee 2 tablespoons
Lukewarm Water 3 cups
Oil 2 tablespoons
Mustard Seeds 1/8 teaspoon
Cumin Seeds 1/8 teaspoon
Whole Black Pepper 1/4 teaspoon
Turmeric Powder 1/8 teaspoon
Green Chilies (chopped) 3
Fresh Ginger (grated) 1/2 teaspoon
Carrot (finely chopped) 1/4 cup
Green Peas 1/4 cup
Curry Leaves 4 leaves
Salt To taste
Fresh Coriander (chopped) 3 sprigs
Cashews (roasted) 2 tablespoons

Instructions

  1. Cook the Moong Dal:

    • Wash the moong dal thoroughly and add it to a pressure cooker. Cook for 3 whistles or until the dal is soft and tender. Once done, set it aside.
  2. Toast the Rava:

    • Heat a pan or kadhai on medium heat and dry roast the rava (semolina) for 3-5 minutes, stirring constantly until it turns a light golden color and releases a pleasant aroma. Set the roasted rava aside.
  3. Prepare the Tempering:

    • In a kadhai, heat oil on medium flame. Once hot, add the mustard seeds, cumin seeds, whole black pepper, and curry leaves. Allow them to splutter for 10-15 seconds, releasing their aromatic flavors.
  4. Add Vegetables and Spices:

    • Add the chopped green chilies, grated ginger, chopped carrot, and green peas. Stir-fry for a couple of minutes until the vegetables soften slightly.
    • Add turmeric powder and cook the mixture for 1 minute to combine the flavors.
  5. Combine Dal, Water, and Cashews:

    • Add the cooked moong dal, roasted cashews, and lukewarm water to the kadhai. Stir well, ensuring everything mixes evenly.
    • Bring the mixture to a boil and let it simmer for a few minutes, allowing the flavors to come together. Stir occasionally to avoid any lumps.
  6. Add the Rava:

    • Gradually add the roasted rava to the boiling mixture, stirring continuously to prevent the formation of lumps. Keep mixing until the rava absorbs the liquid and the mixture thickens.
    • Cook for an additional 3-5 minutes on low heat, ensuring the rava is fully cooked and softened.
  7. Finish and Serve:

    • Add salt to taste and mix well. Once the Rava Pongal is cooked to your desired consistency, turn off the heat. Drizzle 1 tablespoon of ghee over the dish and mix.
    • Garnish with freshly chopped coriander leaves for a burst of freshness.
  8. Serving Suggestions:

    • Serve your delicious Rava Pongal with a side of coconut chutney, sambar, or even enjoy it as is with a cup of masala tea. This dish is perfect for a fulfilling breakfast or light lunch.

Tips for a Perfect Rava Pongal:

  • Roasting the Rava: It’s important to roast the rava well, as this brings out its nutty flavor and prevents the pongal from turning sticky.
  • Tempering Variations: You can experiment with other ingredients like dried red chilies or even a bit of asafoetida (hing) for added flavor.
  • Consistency: If you prefer a softer texture, you can add a bit more water while cooking the rava. Adjust it based on your preference.
  • Ghee: For an authentic taste, always finish with a generous drizzle of ghee on top of the pongal.

Rava Pongal is a flavorful, filling dish that embodies the essence of South Indian cuisine. With its comforting texture, aromatic spices, and vibrant vegetables, this dish will quickly become a favorite in your household. Enjoy it with family and friends, and let the savory goodness of Rava Pongal brighten your day!
