Spicy Dalia Pulao Recipe (Broken Wheat Pulao)

Ingredients

Green Beans (French Beans) 5, finely chopped
Green Chillies 2, finely chopped
Turmeric Powder (Haldi) 1/2 teaspoon
Cumin Seeds (Jeera) 1/2 teaspoon
Salt To taste
Garam Masala Powder 1/2 teaspoon
Red Chilli Powder 1 teaspoon
Tomatoes 2, chopped
Ginger Garlic Paste 1 teaspoon
Bay Leaf (Tej Patta) 1
Coriander (Dhania) Leaves For garnish, finely chopped

Instructions

  1. Dry Roasting the Broken Wheat:

    • Heat 1 teaspoon ghee in a skillet over low flame.
    • Add the broken wheat (dalia) to the skillet and dry roast it until it gives off a pleasant aroma and turns a deep brown color. This should take around 5 minutes.
    • Once done, turn off the heat and set the roasted dalia aside for later use.
  2. Cooking the Vegetables and Spices:

    • In a pressure cooker, heat 1 teaspoon oil on medium flame.
    • Add 1 bay leaf and 1/2 teaspoon cumin seeds to the oil. Let them sizzle for a few seconds.
    • Add the finely chopped onions and sauté them until they turn translucent, about 2-3 minutes.
    • Stir in 1 teaspoon ginger garlic paste, 2 finely chopped green chilies, 1 chopped carrot, 5 chopped green beans, and 2 chopped tomatoes. Sauté for about 2 minutes.
    • Continue sautéing the mixture for another 3-4 minutes until the vegetables soften slightly.
  3. Adding Spices:

    • Now, add the salt, 1/2 teaspoon turmeric powder, 1/2 teaspoon garam masala powder, and 1 teaspoon red chilli powder to the cooked vegetables. Stir well to combine and coat the vegetables with the spices.
  4. Combining the Roasted Dalia:

    • Add the dry-roasted broken wheat (dalia) into the cooker and mix it thoroughly with the sautéed vegetables and spices.
    • Pour in 2 cups of water and stir everything together.
    • Close the lid of the pressure cooker and cook on medium heat for 4 whistles.
    • Once done, turn off the heat and allow the pressure to release naturally.
  5. Serving:

    • Once the pressure has released, open the cooker and fluff the Spicy Dalia Pulao with a fork.
    • Garnish with finely chopped coriander leaves.
    • Serve hot with a side of Burani Raita and end the meal with a delicious Double Ka Meetha for a delightful North Indian feast.
