Instructions

  1. Prepare the Carrots and Mix Ingredients
Start by washing and peeling the carrots. Grate them finely and place them in a mixing bowl. The carrots will naturally release some water, which will help bind the mixture later.

  2. Combine the Ingredients
To the grated carrots, add finely chopped fresh coriander, green chili, gram flour (besan), and salt. Mix all ingredients thoroughly until the batter comes together. The moisture from the carrots will help combine the ingredients into a sticky batter.

  3. Heat the Skillet
Place a skillet (or frying pan) on medium heat and brush it lightly with oil to prevent the pakoras from sticking.

  4. Shape the Pakoras
Using a spoon, take a tablespoon of the carrot mixture and carefully form it into a small disc shape. Place the disc gently onto the heated skillet. Repeat the process to make more pakoras, ensuring there is enough space between each one for them to cook evenly.

  5. Cook the Pakoras
Drizzle a little oil over the pakoras and allow them to cook for about 2 minutes or until the bottom turns golden brown. Flip them over gently and cook the other side for another 2 minutes until both sides are crispy and golden brown.

  6. Serve
Once cooked, remove the pakoras from the skillet and place them on a plate lined with paper towels to drain excess oil. Repeat the process until all the pakoras are cooked.

  7. Serve with Dips
Serve these delicious Carrot and Coriander Fritters hot with a cup of spiced tea and some tangy green chutney for a perfect snack!
