Spicy Mushroom and Broccoli Stir-Fry with Tandoori Mayo

Instructions:

  1. Prep the ingredients: Start by chopping all the vegetables. Clean and chop the mushrooms, broccoli, and red bell pepper. Mince the garlic and finely chop the tomatoes.

  2. Heat the oil: In a kadai or wok, heat the sunflower oil over medium heat.

  3. Sauté the onions: Once the oil is hot, add the chopped onions and sauté them until they turn pinkish and soft.

  4. Add garlic: Stir in the minced garlic and sauté for another 30 seconds until fragrant.

  5. Cook the vegetables: Add the julienned bell peppers, chopped broccoli, mushrooms, and tomatoes. Season with a pinch of salt, and stir-fry for about 5-7 minutes, until the vegetables are slightly tender but still retain their crunch.

  6. Incorporate Tandoori Mayo: Once the vegetables are cooked through, stir in the Del Monte Tandoori Mayo and red chili powder. Mix everything well to combine and allow the mayo to coat the vegetables evenly.

  7. Final touch: Taste and adjust the seasoning by adding more salt or chili powder as needed. Stir-fry for another 2-3 minutes until all ingredients are well combined.
