Red Chilli Powder 1 teaspoon
Turmeric Powder (Haldi) 1/2 teaspoon
Coriander Powder (Dhania) 1 1/2 teaspoons
Cumin Powder (Jeera) 1 teaspoon
Chaat Masala Powder 2 teaspoons
Gram Flour (Besan) 2 tablespoons
Mint Leaves (Pudina) Small bunch

Instructions

Step 1: Prepare the Ingredients

  1. Soak the broken wheat, urad dal, moong dal, and chana dal for 4 hours.
  2. Drain and set them aside.

Step 2: Pressure Cook the Base Ingredients

  1. In a pressure cooker, combine the soaked broken wheat, lentils, mutton, ginger, garlic, and salt.
  2. Add enough water to immerse the ingredients completely.
  3. Pressure cook on medium heat for 5 to 6 whistles.
  4. Reduce the heat to low and let it simmer for an additional 5 minutes.
  5. Turn off the heat and allow the pressure to release naturally.

Step 3: Separate the Mutton

  1. Open the pressure cooker and carefully remove the mutton pieces using a spoon or tongs.
  2. Let the mutton cool. Once cooled, separate the meat from the bones and set it aside.
  3. Reserve the cooked lentils and broken wheat mixture.

  1. Add the boneless mutton to a food processor with a chopping blade attachment.

  1. Allow the mixture to cool completely.
  2. Transfer it to a mixing bowl and add gram flour (besan) and mint leaves. Mix thoroughly.

Step 7: Shape the Kebabs

  1. Grease your palms with a little oil and shape the mixture into round kebabs.

Step 8: Cook the Kebabs

  1. Heat a pan over medium heat and place the kebabs on it.
  2. Drizzle ghee over and around the kebabs.
