    Heat a Kadai (wok) or frying pan on medium heat and add sesame oil. Once the oil is hot, add cumin seeds, ginger, and asafoetida (hing), allowing them to sizzle and release their aroma.

  3. Sautéing Shallots and Tomatoes:
    Add the roughly chopped shallots and sauté until they begin to soften. Then add the finely chopped tomato, turmeric powder, and salt. Stir the mixture frequently, cooking it on low heat until the tomatoes become mushy and the shallots turn light brown.

    Now, add the coarsely ground spice powder into the mixture. Stir well and add about a tablespoon of water to help the spices cook evenly. Let it cook on low flame for 3-4 minutes, allowing the flavors to meld together.
