Instructions

  1. Prepare the Coconut Mix:
    In a mixer grinder, coarsely grind the grated fresh coconut, garlic cloves, and tamarind paste. Set aside this fragrant mixture for later use.

  2. Temper the Spices:
    Heat a heavy-bottomed kadai or pan over medium-low heat. Add the sunflower oil and allow it to warm. Toss in the mustard seeds and cumin seeds. Once they begin to crackle, add the dry red chilies and curry leaves. Stir for a few seconds until the curry leaves splutter and release their aroma.

  3. Cook the Beans:
    Add the chopped flat green beans to the pan. Sprinkle the turmeric powder and season with salt as per taste. Mix everything well to ensure the beans are evenly coated with the spices. Cover the pan with a lid and let the beans cook in their own steam for about 10 minutes, stirring occasionally.

  4. Incorporate the Coconut Mix:
    When the beans are about three-quarters cooked, add the prepared coconut, garlic, and tamarind mixture to the pan. Mix thoroughly so the flavors meld together. Continue to cook uncovered, stirring occasionally, until the raw smell of garlic dissipates, and the sabzi turns dry.

  5. Finish and Serve:
    Once the dish is dry and well-cooked, turn off the heat. Serve this Val Papdi Bhaji hot as a side dish.
