Instructions:

  1. Prep the Ingredients:
    Start by preparing all the ingredients for the Sindhi Style Doda. Roughly chop the onion, finely chop the spring onions, coriander leaves, fenugreek leaves, green chilies, and garlic, and set them aside in a large mixing bowl.

  2. Make the Dough:
    Add the rice flour, cumin seeds, ghee, and salt to the prepared ingredients in the bowl. Slowly begin adding lukewarm water, a little at a time, while mixing continuously to form a firm dough. The dough should not be too sticky; it should hold together when pressed.

  3. Rest the Dough:
    Cover the dough with a clean cloth and let it rest for about 15 minutes. Be mindful not to let it rest for too long, as the dough may become sticky and harder to handle.

  4. Prepare the Tawa/Skillet:
    While the dough is resting, place a nonstick tawa or skillet on medium heat to preheat. Lay a large piece of parchment paper or plastic wrap on your work surface. Grease your palms with a little oil to prevent sticking.

  5. Form the Doda:
    Once the dough has rested, take a small portion of the dough and roll it into a ball. Place the dough ball in the center of the parchment paper or plastic wrap and gently flatten it with your palms to form a round, hand-patted disc, similar to Thalipeeth.

  6. Make the Hole in the Doda:
    Using your index finger, make a hole in the center of the flattened dough. This helps the flatbread cook evenly and ensures the center is crispy.

  7. Cook the Doda:
    Carefully lift the parchment paper with the flattened dough and flip it onto the preheated tawa. Gently peel off the parchment paper. Drizzle a small amount of oil around the edges of the dough and inside the hole in the center. Let the flatbread sizzle and cook for about 4-5 minutes until it begins to turn golden brown at the edges.

  8. Flip the Doda:
    Once the bottom side is half-cooked and golden brown, use a spatula to flip the doda over to cook the other side. Drizzle a little more oil if needed. Allow it to cook for another 3-4 minutes until both sides are golden brown and crispy.

  9. Finish the Flatbread:
    Once cooked, remove the doda from the tawa and place it on a plate. For an extra touch of flavor, add a dollop of butter or ghee on top while the flatbread is still hot.

  10. Serve:
    Serve the Sindhi Style Doda with Kollu Chutney (Horse Gram Chutney) or any chutney of your choice. It’s an ideal breakfast dish, packed with flavors and textures, perfect for starting your day with something wholesome and delicious.
