Instructions

  1. Prepare the Vada Mixture
Begin by mixing the grated paneer, 1 teaspoon of brown sugar, and 2 to 3 teaspoons of beaten curd in a bowl. Be careful not to add too much curd, as the mixture should remain firm to maintain the shape of the vadas. Once everything is well combined, shape the mixture into equal-sized balls and gently mold them into vada shapes.

  2. Chill the Vadas
Place the shaped vadas in the refrigerator for about 30 minutes to help them firm up and hold their shape during frying.

  3. Make the Slurry and Bread Crumbs
In a separate bowl, prepare a slurry by mixing whole wheat flour (or maida) with a little water until you achieve a flowing consistency. Set it aside. Take a slice of multigrain bread and grind it into crumbs using a mixer. Spread the breadcrumbs onto a plate, ready for coating the vadas.

  4. Coat the Vadas
Remove the vadas from the fridge and dip each one gently into the slurry. After that, coat them with the ground multigrain bread crumbs. You can let them rest in the fridge for another 15 minutes to help the coating set.

  5. Prepare the Curd Mixture
While the vadas are chilling, prepare the curd mixture. In a bowl, combine the remaining curd, brown sugar, dry-roasted mustard seeds, curry leaves, and a few strands of saffron. Toss everything together until the sugar dissolves, and the flavors meld.

  6. Fry the Vadas
Heat extra virgin olive oil in a deep frying pan over medium heat. Once the oil is hot, fry the vadas until they are golden brown and crispy on all sides. Remove them from the oil and drain on paper towels to remove excess oil.

  7. Assemble the Multigrain Paneer Dahi Vada
To assemble, take a serving platter and start by placing a layer of the prepared curd mixture on the bottom. Place the crispy vadas in the center of the curd layer. Drizzle more curd over the vadas and top with a sprinkling of sesame seeds, mustard seeds, and garnish with fresh curry leaves.

  8. Serve
Serve your Multigrain Paneer Dahi Vada immediately, accompanied by other delightful chaat items like Roasted Papad Chaat and Idli Chaat for a well-rounded and unforgettable snack experience.
