Ingredients:

Oil 1 tbsp
Cumin seeds (jeera) 1/2 tsp
Fennel seeds (saunf) 1/2 tsp
Carom seeds (ajwain) 1/3 tsp
Asafoetida (hing) A pinch
Green chilies 2, finely chopped
Ginger (adrak) 1-inch piece, finely chopped
Garlic (lehsun) 5 cloves, finely chopped
Onions (pyaz) 2, thinly sliced
Tomatoes (tamatar) 2, finely chopped
Salt As per taste
Turmeric powder (haldi) 1/2 tsp
Fresh fenugreek leaves (methi) 100 gm, washed and chopped
Garam masala powder 1 tsp
Coriander powder (dhania) 1 tsp
Cumin powder (jeera) 1 tsp
Fresh coriander leaves (hara dhania) 1 sprig, finely chopped

Instructions:

  1. Prepare the Amla:

    • To begin with, wash the amla thoroughly and place it in a saucepan. Add enough water to cover the amla and bring it to a boil.
    • Once the water is boiling, add the amla and cook it for 4-5 minutes.
    • Turn off the heat, remove the amla from the water, and allow it to cool down.
    • After cooling, make a slit on the amla and remove the seeds. Chop the amla into small pieces and set it aside.
  2. Prepare the Tempering:

    • In a frying pan or kadhai, heat 1 tablespoon of oil over medium heat.
    • Add cumin seeds, fennel seeds, and carom seeds to the hot oil. Let them splutter and release their aroma.
    • Once the seeds are spluttering, add the finely chopped green chilies, ginger, and garlic. Sauté them for a few seconds until the ginger and garlic release their fragrance.
  3. Cook the Onions and Tomatoes:

    • Add the thinly sliced onions to the kadhai and cook for about 3-4 minutes until they become soft and slightly golden.
    • Next, add the chopped tomatoes, a little water, and cover the pan to let them cook. Cook for about 4-5 minutes until the tomatoes soften and the oil begins to separate from the masala.
  4. Add Spices and Methi:

    • Now, add salt, turmeric powder, and the washed, chopped methi leaves to the pan. Mix well and cook for another 5-6 minutes until the methi softens.
  5. Combine Amla and Spices:

    • Once the methi is soft, add the chopped amla to the pan. Sprinkle garam masala powder, cumin powder, coriander powder, and some more salt as per your taste. Add about 2 tablespoons of water to help blend the flavors together.
    • Mix everything well, cover the pan, and cook for another 2-3 minutes on low heat, allowing the spices to coat the amla and methi.
  6. Garnish and Serve:

    • After 2-3 minutes, turn off the heat and garnish the dish with freshly chopped green coriander leaves.
