  1. Prepare Coconut Water & Pulp: Begin by extracting fresh coconut water and set it aside. Next, remove the coconut pulp from the coconut and place it in a separate bowl.

  2. Blend the Ingredients: In a blender, combine the tomato, tamarind, 2 tablespoons of coconut pulp, and water. Blend them together to form a smooth mixture. Set aside a little coconut pulp for garnishing later.

  3. Cook the Rasam Base: In a saucepan, add the blended tomato-tamarind mixture along with turmeric powder, a pinch of asafoetida (hing), and curry leaves. Let the mixture come to a boil, stirring occasionally.

  4. Add Rasam Powder: Once the mixture begins to boil, add the rasam powder to it. Stir well and allow it to simmer for about 3-4 minutes to enhance the flavor.

  5. Add Coconut Water: Now, pour in the coconut water and continue to simmer the rasam for another minute. After that, turn off the heat.

  6. Prepare the Tempering: For the tempering, heat ghee in a small pan. Once the ghee is hot, add mustard seeds and cumin seeds. Let the mustard seeds splutter and the cumin seeds release their aroma. Turn off the heat.

  7. Combine and Garnish: Add the tempering mixture to the rasam. Garnish the dish with fresh coriander leaves and a little reserved coconut pulp.

  8. Serve: Elaneer Rasam is now ready! Serve it hot with steamed rice and a side of Chaw Chaw Thoran for a complete South Karnataka meal.
