Instructions:

  1. Prepare the Raw Mango: Begin by washing the raw mango thoroughly. Peel the skin off and grate it into a bowl. Set the grated mango aside.

  2. Whisk the Yogurt: In a separate bowl, whisk the yogurt until it’s smooth and creamy. This ensures that the raita will have a silky texture.

  3. Mix the Raita: To the whisked yogurt, add the grated raw mango, salt, red chili powder, and cumin powder. Stir everything together well, making sure the ingredients are evenly incorporated. Set the raita aside.

  4. Temper the Raita: In a small pan, heat the oil on medium heat. Once the oil is hot, add a pinch of asafoetida (hing) and allow it to sizzle for about a minute. Then, add the mustard seeds (rai) and let them pop.
