Hung curd 1/4 cup
Tandoori masala 2 tbsp

Salt As per taste
Ginger (finely chopped) 1 tsp
Garlic (finely chopped) 2 tsp
Onion (thinly sliced) 1 medium-sized
Green capsicum (thinly sliced) 1
Pickled onion 1/2 cup
Chaat masala powder For sprinkling
Eggs 2, beaten well

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Total Time: 40 minutes

Instructions

  1. Prepare the Chicken Marinade:

    • In a mixing bowl, combine chicken breast pieces, hung curd, tandoori masala, turmeric powder, lemon juice, and salt. Mix thoroughly until the chicken is well-coated. Let it marinate for 30 minutes.
  2. Cook the Chicken:

    • Heat oil in a pan and add the finely chopped ginger and garlic. Sauté for about 30 seconds until aromatic.
    • Add sliced onion and green capsicum, and cook for 3-4 minutes, stirring occasionally.
    • Now, add the marinated chicken to the pan and cook for 5-7 minutes until the chicken is tender and cooked through. Once done, turn off the heat and transfer the chicken mixture to a bowl.
  3. Prepare the Paratha (Flatbread):

    • In a separate bowl, combine wheat flour, salt, oil, and enough water to make a smooth dough. Knead the dough for 5-7 minutes until soft and elastic. Add 1 tbsp of oil and knead again for a minute.
    • Cover the dough and let it rest for 15 minutes.
    • Once rested, divide the dough into small balls. Roll each ball into a smooth, round flatbread (paratha).
  4. Cook the Paratha:

    • Heat a tawa (griddle) over medium heat. Once hot, lightly grease it with oil.
    • Place the rolled-out paratha onto the tawa and cook on both sides until golden brown and slightly crisp.
    • Beat the eggs in a bowl. Brush one side of the paratha with the beaten egg, flip it over, and cook for 1-2 minutes until the egg sets and lightly browns. Remove from the tawa and set aside.
  5. Assemble the Kathi Roll:

    • Take the cooked paratha and spread a generous amount of the cooked chicken mixture in the center. Add a spoonful of pickled onions and sprinkle some chaat masala over it.
    • Roll the paratha tightly around the filling to form a roll.
  6. Serve:

    • Serve the chicken kathi roll hot with coriander-mint chutney and a cup of masala chai for an authentic taste of India.
