Instructions
-
Prepare the Chicken Marinade:
- In a mixing bowl, combine chicken breast pieces, hung curd, tandoori masala, turmeric powder, lemon juice, and salt. Mix thoroughly until the chicken is well-coated. Let it marinate for 30 minutes.
-
Cook the Chicken:
- Heat oil in a pan and add the finely chopped ginger and garlic. Sauté for about 30 seconds until aromatic.
- Add sliced onion and green capsicum, and cook for 3-4 minutes, stirring occasionally.
- Now, add the marinated chicken to the pan and cook for 5-7 minutes until the chicken is tender and cooked through. Once done, turn off the heat and transfer the chicken mixture to a bowl.
-
Prepare the Paratha (Flatbread):
- In a separate bowl, combine wheat flour, salt, oil, and enough water to make a smooth dough. Knead the dough for 5-7 minutes until soft and elastic. Add 1 tbsp of oil and knead again for a minute.
- Cover the dough and let it rest for 15 minutes.
- Once rested, divide the dough into small balls. Roll each ball into a smooth, round flatbread (paratha).
-
Cook the Paratha:
- Heat a tawa (griddle) over medium heat. Once hot, lightly grease it with oil.
- Place the rolled-out paratha onto the tawa and cook on both sides until golden brown and slightly crisp.
- Beat the eggs in a bowl. Brush one side of the paratha with the beaten egg, flip it over, and cook for 1-2 minutes until the egg sets and lightly browns. Remove from the tawa and set aside.
-
Assemble the Kathi Roll:
- Take the cooked paratha and spread a generous amount of the cooked chicken mixture in the center. Add a spoonful of pickled onions and sprinkle some chaat masala over it.
- Roll the paratha tightly around the filling to form a roll.
-
Serve:
- Serve the chicken kathi roll hot with coriander-mint chutney and a cup of masala chai for an authentic taste of India.
