Instructions

  1. Prepare the Vegetables:
    Separate the broccoli florets and slice the stems thinly on the diagonal. Cut the asparagus into 4cm pieces, the pak choi into 4cm strips, and halve the baby corn lengthwise, or leave them whole depending on preference.

  2. Blanch the Broccoli:
    Bring a large pot of salted water to a boil. Blanch the broccoli for 3 minutes, then drain and immediately plunge it into cold water to halt the cooking process.

  3. Stir-Fry the Aromatics:
    Heat a wok or large frying pan over high heat. Once the pan is hot, add the oil. When the oil starts to smoke slightly, toss in the shallots and red chilies. Stir-fry for about 1 minute until fragrant.

  4. Cook the Vegetables:
    Add the baby corn and asparagus to the pan. Stir-fry for 30 seconds, then pour in the fish sauce and water. Bring the mixture to a boil, cover the pan, and cook on high heat for 2 minutes.

  5. Finish the Dish:
    Add the blanched broccoli and pak choi, followed by the oyster sauce, sugar, and salt. Continue to cook over high heat for another 3 minutes, or until the vegetables are tender but still crisp.

  6. Serve:
    Serve the stir-fry immediately for the freshest flavor.
