Ingredients

Ingredient Quantity
Rice (Chawal) 1 cup
Ghee (Clarified Butter) 2 tablespoons
Sugar 1/4 cup
Rose Water 2 tablespoons
Saffron A pinch
Cardamom Powder 1/4 teaspoon
Cashews (Roasted in ghee) 1/4 cup
Condensed Milk 2 tablespoons
Milk (Full Cream) 2 cups

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Total Time: 45 minutes

Servings: 4

Cuisine: Oriya (Indian)

Course: Dessert

Diet: Vegetarian

Instructions

  1. Prepare the Rice
Start by washing the rice thoroughly with clean water to remove excess starch. Once cleaned, set it aside to drain.

  2. Cooking the Rice
Heat 2 tablespoons of ghee in a pressure cooker over medium heat. Add the sugar to the ghee and cook it until the sugar turns golden brown. Stir occasionally to prevent the sugar from burning.

  3. Frying the Rice
Add the washed rice to the pressure cooker and fry it in the ghee-sugar mixture for about 1 minute. This step adds a lovely aroma to the rice and enhances the flavor of the kheer.

  4. Adding Water
Pour 2 cups of water into the pressure cooker and close the lid. Cook the rice for 1-2 whistles, ensuring it is soft and fully cooked.

  5. Cooking with Milk
Once the rice is cooked, add 2 cups of milk to the cooker. Let it simmer on a medium flame for 5 minutes, stirring occasionally. This allows the rice to absorb the milk and become creamier.

  6. Add Condensed Milk
Mix in 2 tablespoons of condensed milk for extra richness and sweetness. Stir well to combine.

  7. Flavoring the Kheer
In a small bowl, soak a pinch of saffron in a few tablespoons of warm milk. Once the saffron has infused the milk, add it to the kheer. Also, add 1/4 teaspoon of cardamom powder for a touch of fragrance.

  8. Garnishing
Heat a little ghee in a pan and roast the cashews until they turn golden brown. Sprinkle the roasted cashews over the kheer for a crunchy contrast.

  9. Serving
Your Oriya Style Rice Kheer is now ready! Serve it warm or chilled, garnished with saffron-soaked milk and roasted cashews. This kheer pairs wonderfully with hot puris or even potato vegetables as a complete meal.

Tips for the Perfect Kheer

  • Consistency: You can adjust the consistency of the kheer by adding more or less milk depending on your preference. If you like it thicker, cook it for a few extra minutes; for a thinner consistency, add a little more milk.

  • Saffron: Soaking saffron in warm milk before adding it to the kheer helps release its full flavor and color.

  • Sweetness: Feel free to adjust the amount of sugar or condensed milk according to your taste. Some people prefer a slightly less sweet kheer, while others like it rich and sugary.
