Instructions:

  1. Heat the Oil: Begin by heating the oil in a frying pan or wok over medium heat. Once hot, add the mustard seeds (rai) and urad dal. Let them splutter for about 10 seconds.

  2. Add the Spices: After the mustard seeds and urad dal have spluttered, add the asafoetida (hing), dried red chilies, and curry leaves. Stir for 20 seconds until the spices release their aroma.

  3. Combine the Beans: Add the cooked double beans to the pan along with salt and red chili powder. Mix everything well and cook for about 1 minute, allowing the spices to coat the beans evenly.

  4. Add Fresh Coconut: Sprinkle in the grated fresh coconut and stir again to combine. Let the mixture cook for another minute, allowing the coconut to soften and blend with the spices.

  5. Serve: Once everything is well mixed and heated through, remove from the heat. Serve the Double Beans Sundal as a side dish with mixed vegetable sambar and steamed rice, or enjoy it on its own for a protein-packed snack.
