Instructions:

  1. Roast the Spices and Peanuts
    Begin by heating a flat skillet over medium heat. Add the roasted peanuts and coriander seeds, and dry roast them for about 20 seconds, stirring constantly to avoid burning. Once lightly toasted, add the cloves, cinnamon stick, and grated coconut. Continue to sauté until the mixture turns golden brown and fragrant. Remove from heat and allow it to cool. Once cooled, add the chopped tomato to the mixture and grind everything into a smooth, thick paste using a blender or mortar and pestle. Set aside.

  2. Prepare the Curry Base
