Preparation Time:

Cooking Time:

Instructions:
-
Prepare the Raw Jackfruit:
Start by cutting the raw jackfruit (Kathal) into manageable pieces. To avoid the sticky sap, grease your hands and knife with a little oil before cutting. Once cut, place the jackfruit pieces in a bowl of water with a pinch of salt to prevent browning.
-
Prepare the Curd Masala:
In a separate bowl, whisk together the curd, homemade tomato puree, turmeric powder, red chilli powder, coriander powder, cumin powder, and garam masala powder. Add a little water to make a smooth paste and set this aside for later use.
-
Cook the Sabzi:
In a small pressure cooker, heat 1 tablespoon of mustard oil over medium heat. Once the oil is hot, add the asafoetida (hing) and allow it to sizzle for a few seconds.
Add the finely chopped onions, garlic, and ginger, sautéing until the onions turn golden brown.
-
Add the Spices:
To the sautéed onions, add the cinnamon stick and black cardamom. Stir the spices into the onion mixture to release their flavors.
-
Add the Curd Masala:
Now, add the prepared curd masala mixture to the pressure cooker. Stir well to combine with the onion and spice mixture.
-
Add Jackfruit and Potatoes:
Add the prepared raw jackfruit pieces and diced potatoes into the pressure cooker. Stir to coat everything evenly in the masala.
-
Cooking:
Add salt to taste and pour in 1 cup of water. Stir well, ensuring that everything is combined. Cover the pressure cooker with its lid, and cook on medium heat for about 3-4 whistles. Afterward, turn off the heat and allow the pressure to release naturally.
-
Final Touch:
Once the pressure has released, open the cooker and give the sabzi a good stir. Taste and adjust salt and spices if necessary. Garnish with freshly chopped coriander leaves for a fresh, aromatic finish.
-
Serving:
Transfer the Kathal Masala Sabzi to a serving bowl and serve it hot. This dish pairs wonderfully with phulkas, jeera rice, or a simple carrot salad on the side. For a diabetic-friendly Indian meal, serve it alongside Masala Jowar Methi Roti and Kollu Pachadi for a wholesome and complete meal.

Tips and Variations:
-
Jackfruit Preparation: Fresh jackfruit can be sticky due to the sap, so always grease your knife and hands before cutting it. If you’re short on time, canned or frozen jackfruit can be a good alternative.
-
Adding Heat: Adjust the amount of red chilli powder according to your spice preference. If you prefer a milder flavor, reduce the quantity or omit it altogether.
-
Vegan Option: To make this dish vegan, simply replace the curd (yogurt) with coconut milk or cashew cream for a creamy, non-dairy alternative.
-
Cooking Variations: If you don’t have a pressure cooker, you can cook the sabzi in a regular pot. Just ensure to simmer the ingredients until the jackfruit and potatoes are tender.
