Green Chilies 2, finely chopped
Coriander (Dhania) Leaves 2-3 sprigs, chopped
Lemon 1/2, juiced
Salt To taste
Butter (Unsalted) For cooking
Del Monte Mint Mayo 4 tbsp

Preparation Time:

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes

Instructions:

  1. Prepare the Wheat Tortillas:

    • In a large mixing bowl, combine the whole wheat flour, all-purpose flour (maida), and salt.
    • Gradually add water and mix to form a smooth dough that is easy to handle and roll out. If necessary, adjust the water quantity.
    • Once the dough is ready, cover it with a damp cloth and set it aside for a few minutes.
  2. Make the Guacamole Filling:

    • In a separate bowl, mash the avocado with a fork until creamy.
    • Add the cubed tomato (after removing the pulp), finely chopped onion, red bell pepper, yellow bell pepper, garlic, green chilies, and coriander leaves.
    • Squeeze the juice of half a lemon into the mixture, and season with salt to taste.
    • Mix everything well and adjust the seasoning if needed. Set aside.
  3. Shape and Cook the Tortillas:

    • Divide the dough into small equal-sized balls (about the size of a golf ball).
    • On a lightly floured surface, roll each ball into a 6-inch circle. Repeat with the remaining dough balls.
    • Heat a flat skillet or tava over medium heat. Lightly brush with a teaspoon of oil.
    • Place one rolled-out tortilla onto the skillet and toast it lightly on both sides, just until it begins to show golden spots. Set aside and repeat the process with the remaining dough.
  4. Assemble the Quesadilla:

    • Spread 1 tablespoon of Del Monte Mint Mayo onto one side of each tortilla.
    • On top of the mayo-spread tortilla, evenly distribute a generous amount of the freshly made guacamole mixture.
    • Cover the guacamole-filled tortilla with another tortilla to form a sandwich-like structure.
  5. Cook the Quesadilla:

    • Heat a tablespoon of unsalted butter in the skillet.
    • Place the assembled quesadilla onto the skillet and toast it on medium heat, pressing gently with a spatula, until the tortillas turn crispy and golden brown on both sides (about 2-3 minutes per side).
    • Remove from heat and let it cool slightly before cutting.
  6. Serve:
