Instructions:

  1. Prepare the Chicken Mixture:

    • In a pressure cooker, add the boneless chicken pieces along with salt, red chili powder, curd (yogurt), and ground garlic paste.
    • Pour in 1 to 2 cups of water, enough to cover the chicken partially. Mix everything well to ensure the chicken is coated in the spices and yogurt.
  2. Cook the Chicken:

    • Close the lid of the pressure cooker and cook for 10 minutes or for about 2 whistles. After this, turn off the heat but let the steam release naturally before opening the lid.
    • Once the pressure has released, carefully take out the chicken and set it aside. The chicken should be cooked through and tender at this stage.
  3. Fry the Chicken:

    • Heat 1/2 cup of oil in a deep frying pan over medium heat. Once the oil is hot, add the cooked chicken mixture to the pan.
    • Stir the chicken gently and continue to fry for about 5 to 10 minutes, allowing the excess water to evaporate. During this time, the chicken will absorb all the spices and flavor, and the oil will begin to slightly caramelize the masala coating.
  4. Garnish and Serve:

    • Once the water has completely evaporated, remove the chicken from the pan and garnish with fresh coriander leaves.
