Ingredients

Ingredient Quantity
Butter 125g
All-purpose flour 265g
Sugar 135g
Whole milk 135g
Eggs 110g (approx. 2 large eggs)
Dark chocolate chips 100g
Vanilla bean 1 pod
Baking soda 1 teaspoon
Salt A pinch
Baking powder 10g

Instructions

  1. Prepare the Butter Mixture:
Begin by softening the butter. Allow it to sit at room temperature for at least an hour before starting the recipe. Once softened, place the butter in a large mixing bowl and beat it with electric beaters on medium speed. Add the sugar gradually, continuing to mix until the combination is light, fluffy, and creamy in texture.

  2. Extract Vanilla Seeds:
Take the vanilla bean and slice it lengthwise. Use the back of a knife to scrape the seeds from inside the pod. Add these fragrant seeds into the butter-sugar mixture, giving everything a final quick blend to fully incorporate the vanilla aroma.

  3. Add the Eggs:
With the electric beaters still running on medium speed, crack in the eggs one at a time. Be sure to add them separately, mixing well after each addition, to ensure a smooth, homogenous batter. Make sure the eggs are at room temperature for the best results.

  4. Sift and Combine the Dry Ingredients:
In a separate bowl, sift the all-purpose flour along with the baking powder and baking soda. Add a pinch of salt to balance the sweetness. Gradually incorporate these dry ingredients into the wet ingredients, stirring gently with the beaters on low speed. You will notice the batter beginning to thicken as the dry ingredients mix in.

  5. Add Milk to Loosen the Batter:
Once the flour mixture is well combined, pour in the whole milk in a steady stream while continuing to mix. This step helps to loosen the batter and creates a smooth, creamy consistency. The batter should now be thick but soft, perfect for scooping into muffin tins.

  6. Fold in the Chocolate Chips:
With a spatula, fold in 80g of the dark chocolate chips. These will melt slightly during baking, creating pockets of gooey chocolate in each muffin.

  7. Portion the Batter into Muffin Tin:
Line a muffin tin with paper liners, or lightly grease the cups with butter or cooking spray. Using an ice cream scoop or spoon, divide the batter evenly into the muffin tin. Each muffin should weigh about 70 grams, ensuring uniform baking.

  8. Top with Remaining Chocolate Chips:
Sprinkle the remaining 20g of chocolate chips over the tops of the muffins. This gives a beautiful finish and an extra burst of chocolate goodness once baked.

  9. Bake the Muffins:
Preheat your oven to 180°C (350°F). Place the muffin tin in the oven and bake for 18-20 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean. Make sure to keep an eye on them towards the end of the baking time to avoid over-baking.

  10. Cool and Serve:
Once the muffins are done, remove them from the oven and let them cool in the tin for about 5 minutes. Then, transfer the muffins to a wire rack to cool completely. The muffins will be slightly crispy on the outside, while remaining soft and tender on the inside, with a delightful chocolatey melt.

Enjoy your freshly baked Chocolate Chip Muffins! Whether enjoyed with a cup of tea or served as an afternoon snack, these muffins are sure to be a crowd-pleaser.

Tips:

  • Room Temperature Ingredients: To ensure smooth blending, be sure that both your eggs and milk are at room temperature. Cold ingredients can cause the butter to seize up, resulting in a lumpy batter.
  • Chocolate Chips: If you prefer a more indulgent muffin, feel free to add more chocolate chips to the batter. You can also experiment with milk chocolate or even white chocolate chips for a different flavor profile.
  • Storage: These muffins can be stored in an airtight container at room temperature for up to 3 days. You can also freeze them for up to a month and reheat them in the microwave for a quick treat.

Perfect for any occasion, these Chocolate Chip Muffins are light, fluffy, and filled with gooey chocolate chips that will melt in your mouth.
