Ingredients

Ingredient Quantity
Mango (Raw), peeled and diced 1
Kaddu (Parangikai/ Pumpkin), yellow 1
Green Chillies 3
Ginger, grated 1/2 teaspoon
Dry Red Chillies 2
Cumin Seeds (Jeera) 1 teaspoon
Fennel Seeds (Saunf) 1 teaspoon
Methi Seeds (Fenugreek Seeds) 1/4 teaspoon
Whole Black Peppercorns 1/2 teaspoon
Coriander Seeds (Dhania) 1/2 teaspoon
Fresh Coconut, grated 2 tablespoons
Oil 1 tablespoon

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Instructions

  1. Roast the Spices:
Start by dry roasting each of the following spices separately: dry red chilies, cumin seeds, fennel seeds, fenugreek seeds, black peppercorns, and coriander seeds. Lightly toast them in a dry pan until they release their aroma. Allow the roasted spices to cool down completely before grinding them into a fine powder. This step enhances the flavors and gives the curry its distinct taste.

  2. Saute the Aromatics:
Heat 1 tablespoon of oil in a heavy-bottomed pan over medium heat. Once hot, add the slit green chilies and grated ginger. Saute the mixture for about a minute, allowing the ginger to release its fragrance and the chilies to soften.

  3. Add the Ground Spice Mix:
Sprinkle the ground spice powder into the pan, mixing it well with the ginger and chilies. Saute for another minute to allow the spices to bloom and infuse their flavors into the oil.

  4. Cook the Raw Mango:
Add the diced raw mango cubes to the pan, followed by salt and a splash of water. Stir to combine and cook until the mango is about three-quarters done. The mango should soften but still retain some of its tanginess and texture.

  5. Add the Pumpkin:
Once the mango is partially cooked, add the diced pumpkin cubes to the pan. Stir everything together, ensuring the pumpkin is well-coated with the spices. If needed, add a little more water to help the vegetables cook evenly. Cover the pan and let it cook until the pumpkin is tender and fully cooked. The consistency of the curry should be semi-dry, with a thick, flavorful sauce that clings to the vegetables.

  6. Finish with Coconut:
Once the pumpkin and mango are cooked to perfection, add the grated fresh coconut to the curry. Stir everything together, and let it cook for a couple more minutes, allowing the coconut to melt into the curry and add a rich, creamy texture.

  7. Serve:
Turn off the heat, and your Malwani Pumpkin and Raw Mango Curry is ready to serve! Pair it with a side of steamed rice or a traditional Malvani cauliflower thoran for a complete meal. This curry is perfect for a comforting weekday lunch or dinner.
