Instructions

  1. Cook the Rice
    Begin by cooking the rice in a pressure cooker. Once the pressure is released naturally, fluff the rice with a fork and add a teaspoon of oil to it. Mix well and set it aside.

  2. Prepare the Avarekalu Beans
    In a saucepan, cook the avarekalu (field beans) with sufficient water until they are soft. After cooking, drain the excess water and set the beans aside.

  3. Temper the Spices
    Heat a kadai (deep frying pan) and add a tablespoon of ghee (or oil). Once the ghee heats up, add mustard seeds. Let them splutter, then add urad dal, asafoetida (hing), and curry leaves. Stir for a few seconds until the spices release their fragrance.

  4. Sautรฉ the Onions and Green Chilies
    Add the chopped onions and slit green chilies to the tempered spices. Sautรฉ them until the onions turn golden brown and soft.

  5. Combine the Avarekalu with the Tempered Spices
    Add the boiled avarekalu beans to the sautรฉed onions and chilies. Stir well to combine the ingredients.

  6. Mix in the Rice
    Add the boiled rice to the pan with the avarekalu mixture. Stir gently to ensure the rice is evenly mixed with the beans and spices.

  7. Finish with Lemon and Coriander
    Turn off the heat and sprinkle lemon juice over the rice and beans. Add the chopped coriander leaves and give everything a final stir. Taste and adjust the salt as per your preference.
