Prepare the Omelette:
Begin by breaking the eggs into a bowl and whisk them together with finely chopped onions, coriander leaves, green chillies, and a pinch of salt. Heat a non-stick omelette pan with a little oil. Once hot, pour the egg mixture into the pan, spreading it evenly. Allow it to cook on one side before flipping it over to cook the other side. Once done, fold the omelette and cut it into thin strips. Set aside. -
Grind the Onion Paste:
To make the onion paste, grind the chopped onion, green chillies, coriander seeds, black peppercorns, ginger, garlic, coriander leaves, mint leaves, and tomato into a smooth, thick paste. Set it aside. -
Grind the Coconut Paste:
In a separate grinder, combine the grated fresh coconut and poppy seeds and grind them into a smooth paste. Set aside as well. -
Grind the Curd Paste:
In a bowl, whisk together the hung curd (Greek yogurt), turmeric powder, and a pinch of salt. This forms the curd paste and can be kept aside. -
Tempering the Spices:
Heat oil in a large kadai or wok for tempering. Add the cinnamon stick, cardamom pods, and curry leaves, frying them until they release a fragrant aroma. -
Frying the Onions:
Add the chopped onion to the kadai and sauté for a few minutes until they turn golden brown. -
Cooking the Masala:
