- Begin by peeling the onions and grating them using a coarse grater. Set them aside to prepare for cooking.
- Next, remove the rind from the Montasio cheese and grate it into fine pieces, ensuring it will melt easily during cooking.
- Now, heat a large pan over medium heat and pour in 40g of olive oil. Add the grated onions to the pan and sauté them gently for a few minutes, stirring occasionally with a wooden spoon. This will help avoid burning or sticking to the bottom of the pan.
- Once the onions have softened, it’s time to add the grated potatoes. Stir them into the onions, allowing the flavors to combine.
- At this point, add the grated Montasio cheese to the mixture. Stir everything together and season with salt and freshly ground black pepper to taste. Let the mixture cook over medium heat for around 20 minutes, stirring regularly to ensure the cheese melts evenly and the ingredients bind together.
