Instructions

  1. Prepare the Mozzarella
To make this delightful stuffed mozzarella roll, begin by placing the mozzarella in a bowl (make sure it’s slightly larger than the mozzarella itself). Pour in its own brine and add enough water to fully cover the cheese. Next, microwave the bowl at 900W for 7 minutes, allowing the mozzarella to soften and melt slightly.

  2. Prepare the Vegetables and Prosciutto
While the mozzarella is softening, take the ripe tomatoes and wash them thoroughly. Slice them thinly to allow them to blend seamlessly with the other ingredients. Wash the arugula and set aside, ensuring it’s free of excess water. Lay out the prosciutto slices on a clean surface, ready to roll up with the cheese.

  3. Shape the Mozzarella
Once the mozzarella has softened in the microwave, carefully transfer it using a spoon onto a sheet of parchment paper. Work quickly, as mozzarella tends to harden fast once removed from the heat. Spread the mozzarella into a thin rectangle, roughly 35 x 25 cm in size, and aim for an even thickness of about a few millimeters.

  4. Add the Fillings
Gently peel away the top layer of parchment paper. Sprinkle a light pinch of salt over the mozzarella, then evenly arrange the sliced tomatoes and fresh arugula over the cheese.

  5. Roll and Rest
Using the parchment paper as a guide, begin rolling the mozzarella tightly, ensuring the filling stays inside. The parchment will help you roll it up snugly without making a mess. Once the roll is formed, wrap it tightly in the parchment paper and refrigerate for at least 10 minutes to allow the mozzarella to firm up and hold its shape.

  6. Serve
After resting in the fridge, carefully remove the parchment paper. Slice the roll into 12 equal pieces, each about 2.5 cm thick. These bite-sized rolls make a perfect appetizer, and their vibrant colors will delight your guests at any gathering.

Your stuffed mozzarella roll is now ready to be served as a fresh and exciting appetizer at your next event. Enjoy the delicious contrast of creamy mozzarella, savory prosciutto, refreshing tomatoes, and peppery arugula in every bite!
