Onions 2 (roughly chopped)
Garlic 3 cloves
Ginger 1-inch piece
Homemade tomato puree 1-1/2 cups
Cashew nuts 1/4 cup (ground to smooth paste)
Fresh cream 1 tablespoon
Kashmiri Red Chilli Powder 1 teaspoon
Turmeric powder (Haldi) 1/2 teaspoon
Coriander Powder (Dhania) 1 teaspoon
Garam masala powder 1 teaspoon
Kasuri Methi (Dried Fenugreek Leaves) 1 teaspoon
Coriander (Dhania) Leaves For garnish (chopped)
Salt To taste

Instructions:

  1. Prep the Ingredients:
    Start by gathering all the ingredients. Prepare the tomato puree according to your preferred method or use store-bought puree if you’re short on time. Set it aside. Grind the cashew nuts with a little water to make a smooth paste. Set this aside as well. Next, make a paste of the onion, garlic, and ginger and keep it aside for later use.

  2. Prepare the Kofta Mixture:
    In a large mixing bowl, combine the grated paneer, cheese, and mashed potatoes. Add the gram flour (besan), salt, and red chilli powder. Mix everything thoroughly to form a dough-like consistency. Divide the mixture into small, lemon-sized balls and set them aside.

  3. Fry the Koftas:
    Heat a paniyaram pan (or a similar pan) over medium heat. Add a little oil to each cavity of the pan. Place the reshmi kofta balls in the pan and cook them until they are golden brown and cooked through. Ensure the koftas are crispy on the outside but remain soft on the inside. Once done, remove the koftas from the pan and set them aside.

  4. Prepare the Gravy:
    In a kadai (wok), heat some oil over medium heat. Add the prepared onion, garlic, and ginger paste and sauté until the raw smell disappears and the onions turn light brown. Add all the spices: Kashmiri red chilli powder, turmeric powder, coriander powder, and garam masala powder. Stir the mixture for a few seconds, allowing the spices to release their aroma. Now, add the tomato puree, cashew paste, and fresh cream to the pan. Stir the mixture well and bring it to a brisk boil. Once boiling, reduce the heat and let the curry simmer for about 10 minutes to allow the flavors to meld together.

  5. Add the Koftas:
    Taste the curry and adjust the salt and seasoning according to your preference. Once the curry is ready, gently add the fried reshmi koftas into the gravy. Sprinkle the kasuri methi (dried fenugreek leaves) and chopped coriander leaves for added aroma and flavor. Let the koftas simmer in the gravy for about 3 to 4 minutes so they soak up the rich flavors of the curry.

  6. Serve:
    Serve the Reshmi Kofta Curry hot, garnished with more fresh coriander leaves, and accompanied by phulka (Indian flatbreads), palak paneer, dal makhani, and kadai beans and carrot pulao for a wholesome and flavorful North Indian dinner.
