Instructions:
To prepare the Pan-Fried Artichokes, begin by creating a bowl of acidulated water (water with a little lemon juice) to prevent the artichokes from browning. As you prep the artichokes, trim the stem, remove any tough outer leaves, and carefully cut off the top, making sure you remove the sharp tips. Using a paring knife (or vegetable peeler), peel away the outer layers until the heart is exposed. Once peeled, cut each artichoke in half and place it in the acidulated water.
In a large skillet, heat a generous drizzle of extra virgin olive oil over medium heat. Add a clove of garlic, lightly smashed, and a sprig of fresh mint to infuse the oil with flavor. Once the garlic begins to release its fragrance, add the artichokes, which you’ve drained and divided in half, into the pan. Season with a pinch of fine salt and freshly ground black pepper. Stir the artichokes to coat them evenly with the olive oil and garlic.
Cover the pan with a lid and allow the artichokes to cook for about 5 minutes, letting them soften slightly. After 5 minutes, pour in the white wine and water. Stir to combine, then cover the pan again and let the artichokes simmer for an additional 10 minutes. During this time, the liquid will reduce, and the artichokes will become tender.
After 10 minutes, remove the lid, and let the liquid cook off until it thickens slightly. Stir in freshly chopped parsley for a burst of fresh flavor.
Once the liquid has reduced to a silky sauce and the artichokes are fork-tender, your pan-fried artichokes are ready to serve. They are best enjoyed immediately, as they are a perfect, flavorful side dish to accompany any meal.
