Mustard Seeds (Rai/Kadugu) 1 teaspoon
White Urad Dal (Split) 1/2 teaspoon
Dry Red Chillies 2
Curry Leaves 1 sprig
Coriander Leaves (finely chopped) 1 tablespoon
Oil 2 teaspoons
Salt To taste

Instructions

  1. Cook the Avarekalu (Hyacinth Beans):
    Begin by washing the Avarekalu (Broad Beans) thoroughly. Place them in a pressure cooker, add 1 cup of water, and cook for 2 whistles. Once the pressure releases naturally, set the beans aside.

  2. Grind the Coconut Mix:
    In a mixer grinder, combine grated coconut, green chilli, and cumin seeds. Grind to a coarse mixture and set it aside.

  3. Tempering (Tadka):
    Heat 2 teaspoons of oil in a pan over medium heat. Once hot, add mustard seeds and let them crackle. Add the urad dal and dry red chillies. Sauté until the dal turns golden brown and crispy.

  4. Saute Onions and Spices:
    Add the curry leaves to the pan and sauté for a few seconds until they release their fragrance. Then, add the finely chopped onion and sauté until the onions turn soft and golden in color.

  5. Combine the Ingredients:
    Once the onions have softened, add the cooked Avarekalu to the pan. Season with salt to taste. Stir everything together and let it sauté for a couple of minutes until the flavors blend well.

  6. Add the Coconut Mixture:
    Add the prepared coconut mix to the pan, followed by the chopped coriander leaves. Mix everything thoroughly to combine the flavors. Cook for another minute, then switch off the heat.

  7. Serving Suggestions:
    Serve the Avarekalu Usli warm, along with Beetroot Poriyal, Thakkali Vengaya Sambar, steamed rice, and Papad for a complete and wholesome South Indian lunch.
