Instructions:

1. Make the Puff Pastry:
To start, prepare the puff pastry by mixing the all-purpose flour and unsalted butter. Use your fingertips to break the butter into the flour until the mixture resembles breadcrumbs. Gradually add chilled water, 1 tablespoon at a time, kneading until the dough is firm and smooth. Wrap the dough in cling film and chill in the fridge for at least 30 minutes to set.

2. Prepare the Torte Layers:
While the dough is chilling, heat 1 tablespoon of salted butter in a pan over medium heat. Add the sliced onions and sweet potatoes. Season with salt and black pepper, and sauté for about 12 minutes until the sweet potatoes are golden and tender. Set aside.

3. Cook the Omelets:
In another pan, melt ½ tablespoon of butter. Whisk 4 eggs with ½ tablespoon of parsley, salt, and pepper, and pour into the pan. Cook the omelet, flipping it carefully to ensure it’s cooked on both sides. Repeat with the remaining 4 eggs to make a second omelet. Once done, set both omelets aside.

4. Assemble the Layers:
Grate the cheddar cheese and prepare the chicken ham. Now, remove the chilled puff pastry from the fridge. Dust your work surface with flour and divide the dough into two equal portions. Roll each portion to fit your baking pan (an 8-inch round springform pan works well).

Preheat your oven to 150°C (300°F).

5. Layer the Torte:
Place one rolled layer of puff pastry at the bottom of the pan, pressing gently to ensure it fits snugly. Use a fork or knife to prick small holes all over the pastry to ensure even cooking. Begin layering: place one omelet on top of the pastry, followed by a layer of roasted sweet potatoes, then ½ cup of grated cheese. Repeat the layers with another omelet, roasted sweet potatoes, and cheese. Top with the second layer of puff pastry, sealing the edges well. Trim any excess pastry and prick holes on top.

6. Egg Wash & Baking:
In a small bowl, whisk together the whole egg and 1 tablespoon of water. Brush this egg wash over the top pastry layer to give it a beautiful golden finish. Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the pastry turns golden and crisp.

7. Serve:
Once the torte is baked, remove it from the oven and allow it to cool for about 5 minutes. Cut into slices and serve immediately.

This Brunch Omelette Torte is perfect when paired with a hot cup of coffee or a comforting cup of Masala Chai for a delightful breakfast or brunch. Enjoy the blend of textures and flavors as you savor each bite of this impressive dish.

Pro Tip:
To make this torte even more impressive, you can add a sprinkle of extra cheese on top before baking for an extra cheesy finish. You can also use different vegetables or add herbs for a personalized touch!
