    Heat 1 tablespoon of extra virgin olive oil in a wok over medium heat. Add the minced garlic and finely chopped spring onions. Stir-fry for 1-2 minutes, allowing the flavors to infuse and the onions to soften.
    Add the steamed beetroot chunks to the wok, and stir-fry for an additional 4-5 minutes, until the beets develop a lovely roasted aroma and flavor. The slight caramelization during this step is key to enhancing the rustic flavor of the beets.

  3. Blend the Ingredients
    Transfer the roasted beets, garlic, spring onions, and all remaining ingredients—walnuts, cumin powder, salt, lemon juice, and black pepper—into a blender or food processor.
