Category: Desserts
Servings: 8

Ingredients:

Ingredient Quantity
Ricotta cheese 200g
All-purpose flour 200g
Sugar 200g
Butter 200g
Eggs 3
Baking powder 10g
Pinch of salt 1 pinch
Orange zest 1 zest
Rum 30g
Pistachios (whole) 100g
Blanched almonds 100g
Heavy cream 200g
Dark chocolate 140g
Butter 20g
Crushed pistachios (for garnish) As needed

Instructions:

To create this incredibly easy 5-minute ricotta cake, begin by placing all the ingredients for the batter into a food processor. Start with the flour and sugar, followed by the baking powder. Add the blanched almonds to the mix.

Next, cut the butter into small pieces and incorporate it into the mixture along with the eggs. For added flavor, infuse the batter with the aroma of rum. Blend everything together until the ingredients are fully combined.

Once the base of the batter is ready, add the ricotta cheese that has been well-drained, and give the mixture another pulse to ensure itโ€™s smooth and even. You should now have a homogeneous batter, rich in flavor and creamy in texture.

Grease and flour a 24 cm (9-inch) round cake pan. Pour the prepared batter into the pan, spreading it evenly using a spatula. Now itโ€™s time to bake!

Place the pan into a preheated static oven at 180ยฐC (350ยฐF). Bake the cake for about 50 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the cake from the oven and allow it to cool slightly.

While the cake is cooling, prepare the decadent chocolate topping. Pour the hot heavy cream over the dark chocolate, which can either be chocolate chips or a chopped bar of chocolate. Use a whisk to stir and melt the chocolate into a velvety cream.

Add the butter in small pieces to the melted chocolate and whisk until smooth.

Once the cake has cooled, flip it onto a wire rack to ensure an even coating of the chocolate sauce. Pour the rich, glossy chocolate sauce over the cake, covering it completely.

To finish, generously sprinkle crushed pistachios over the top, adding a crunchy contrast to the silky chocolate and the soft ricotta base.

Allow the cake to set for a few minutes before slicing and serving. This 5-Minute Ricotta Cake with Chocolate and Pistachio is now ready to delight your taste buds. Enjoy the blend of creamy ricotta, rich chocolate, and crunchy pistachios in every bite.

Pro Tip: For an extra touch of elegance, you can garnish the cake with whole pistachios or serve it with a dollop of fresh whipped cream on the side.

Enjoy your homemade, irresistibly delicious cake!
