Ingredients

Ingredient Amount
Baby Zucchini 20
Mozzarella 150g
Breadcrumbs 20g
Puff Pastry 1 sheet
Grana Padano DOP (or Parmesan) 80g
Garlic 2 cloves
Parsley 2 sprigs
Extra Virgin Olive Oil 2 tbsp
Butter to taste
Fine Salt to taste
Black Pepper to taste

Instructions

  1. Prepare the Zucchini Flowers:
Start by preparing the zucchini flowers. Remove the stems and carefully cut out the central pistils. Once cleaned, set the flowers aside for later.

  2. Slice the Zucchini:
Wash the baby zucchini thoroughly and slice them into rounds. Set aside.

  3. Cook the Zucchini:
In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the crushed garlic and sautΓ© for about 2 minutes until fragrant. Add the sliced zucchini to the pan, stirring occasionally. Cook on low heat for approximately 10 minutes or until the zucchini is tender. Stir occasionally to prevent it from sticking to the pan.

  4. Season and Add the Herbs:
Once the zucchini is cooked through, sprinkle finely chopped parsley, and season with salt and black pepper to taste. Gently mix to incorporate the seasoning.

  5. Add the Zucchini Flowers:
After seasoning the zucchini, add the zucchini flowers to the pan. Stir gently to mix them with the zucchini and let them cook together for just a minute or two before removing the pan from heat.

  6. Prepare the Puff Pastry:
Unroll the puff pastry sheet onto a clean, flat surface. Lightly roll it out with a rolling pin to fit your pie dish. Grease the dish with butter, then carefully lay the pastry in the dish, pressing down on the edges. Use a fork to prick the surface of the pastry to prevent it from puffing up too much during baking.

  7. Assemble the Pie:
Sprinkle 50g of Grana Padano cheese evenly over the puff pastry in the pie dish. Then, spoon the cooked zucchini and zucchini flowers mixture into the pastry base, spreading it evenly.

  8. Add the Mozzarella:
Cut the mozzarella into small, bite-sized pieces and scatter them over the top of the zucchini mixture. Sprinkle the remaining Grana Padano cheese and the breadcrumbs over the entire dish for a golden, crispy topping.

  9. Bake the Pie:
Preheat your oven to 180Β°C (350Β°F) if using a conventional oven, or 160Β°C (320Β°F) if using a fan-assisted oven. Place the pie in the oven and bake for 15-20 minutes (or 10-15 minutes in a fan oven), until the pastry is golden brown and the top is beautifully crispy.

  10. Serve:
Once baked, remove the savory pie from the oven and let it cool slightly. This pie is best served warm, but can also be enjoyed at room temperature. Slice into portions and serve to your guests for a delightful treat.
