Instructions:

  1. Prepare the Coffee:
    Begin by brewing 330g of coffee using a moka pot. Once brewed, transfer the coffee to a carafe and allow it to cool to room temperature.

  2. Mix the Wet Ingredients:
    In a large mixing bowl, add the sugar and pour in the cooled coffee. Stir well to ensure that the sugar dissolves completely.

  3. Combine the Dry Ingredients:
    In a separate bowl, sift the all-purpose flour and baking powder together to ensure there are no lumps. This step will help the cake rise evenly and have a smooth texture.

  4. Grease and Flour the Cake Pan:
    Take a 24cm diameter round cake pan and pour a small amount of sunflower seed oil into it. Use a paper towel or kitchen cloth to evenly spread the oil across the entire surface of the pan. Then, lightly dust the pan with flour by adding a spoonful of flour and shaking the pan to coat it, tapping out the excess.

  5. Prepare the Cake Batter:
    Now, add the flour and baking powder mixture to the wet ingredients in the large bowl. Stir the ingredients together to form a smooth batter. If needed, use a spatula to scrape down the sides of the bowl and ensure the batter is well-combined.

  6. Bake the Cake:
    Pour the cake batter into the prepared pan. Use a spatula to smooth the top and ensure the batter is evenly distributed.     While the cake cools, brew an additional 40g of coffee using your moka pot. Once brewed, allow it to cool. In a separate bowl, sift the powdered sugar to remove any lumps. Gradually add the cooled coffee to the powdered sugar, mixing constantly until you achieve a smooth and glossy glaze. The consistency should be thick enough to coat the back of a spoon but still pourable.

  8. Glaze the Cake:
    Once the cake has cooled completely, gently turn it out of the pan and place it on a serving plate. Pour the coffee glaze over the top of the cake, allowing it to drip down the sides. Use the back of a spoon to help spread the glaze evenly across the surface.

  9. Decorate the Cake:
    To finish, decorate the top of the cake with a few whole coffee beans for a rustic touch. This adds a nice visual contrast and enhances the coffee flavor.
