Instructions:

  1. Prepare the Biscuit Crust:
    Begin by making the base of the cheesecake. In a food processor, blend the digestive biscuits along with two tablespoons of brown sugar until finely crushed. Once done, transfer the mixture to a 24 cm (9-inch) round cake pan that has been greased and lined with parchment paper. Use the back of a spoon to press the biscuit mixture evenly across the bottom, and gently press it up the sides of the pan as well. For a firmer base, wet your spoon with 30g of water to help pack the crust tightly. Place the pan in the refrigerator to chill for at least 30 minutes to allow the crust to set.

  2. Prepare the Pumpkin Filling:
    While the crust is chilling, prepare the pumpkin filling. Start by washing and peeling the pumpkin, then chop it into small cubes. Place the pumpkin pieces in a pot with 60g of water and cook over medium heat for about 20 minutes, or until the pumpkin is soft and tender. Once cooked, set it aside to cool.
