Instructions:

    Begin by rehydrating the desiccated coconut. Place 150g of the desiccated coconut into a small bowl, and add 200ml of whole milk. Stir well to fully coat the coconut and allow it to soak. Set this aside to absorb the liquid while you prepare the rest of the ingredients.

  2. Prepare the Cake Batter:
    In a large mixing bowl, start by creaming together the unsalted butter and granulated sugar using an electric mixer. Beat until the mixture becomes light and fluffy, ensuring the butter is fully incorporated with the sugar. This should take about 4-5 minutes on medium speed.
