Instructions

Step 1: Prepare the Ingredients

  • Wash and cut the carrots into 1/2-inch sticks.
  • Separate the cauliflower into bite-sized florets.
  • Keep the green peas, green chilies, and all the spices (ajwain, bay leaves, cinnamon, cardamom, and black pepper) ready.

Step 2: Heat the Oil and Temper Spices

  • Heat mustard oil in a heavy-bottomed pan or kadhai until it reaches its smoking point, then reduce the heat.
  • Add carom seeds, bay leaves, cinnamon sticks, cardamom pods, and black peppercorns. Sauté for 10–20 seconds until fragrant.

Step 3: Cook the Carrots and Cauliflower

  • Add the slit green chilies and carrots to the pan. Sauté for 1 minute to coat them with the aromatic spices.
  • Add the cauliflower florets and a pinch of salt. Mix well.
  • Add a splash of water, cover the pan, and cook on low heat until the cauliflower turns tender. This should take about 7–8 minutes.

Step 4: Add Green Peas

  • Once the cauliflower is tender, add the green peas to the pan. Stir well, cover again, and cook for another 3–4 minutes.

Step 5: Adjust and Finish

  • Check the seasoning and add more salt if needed.
  • Turn off the heat, remove the bay leaves and cinnamon sticks, and serve hot.
