Instructions:

Step 1: Prep the Salmon

To start, prepare the salmon by removing the skin and bones. If you’re not comfortable doing this yourself, feel free to ask your local fishmonger to prepare the fillets for you. You should end up with two equal-sized salmon steaks, completely boneless and skinless.
Next, finely chop the fresh herbs—dill, rosemary, and thyme—keeping the bay leaves and one sprig of rosemary aside for later use. Use a vegetable peeler to remove the zest from the lemon, then cut it into thin strips. Set the lemon zest aside, as it will be used to infuse the steam.

Step 2: Marinate the Salmon

Place the salmon fillets into a shallow dish and drizzle over 8 tablespoons of extra virgin olive oil. Add half of the finely chopped herbs and the juice of the lemon, making sure the fish is well coated. Let the salmon marinate for about 10 minutes, turning the fillets occasionally to ensure even marination. Sprinkle with a pinch of salt to taste.

Step 3: Prepare the Vegetables

While the salmon marinates, finely chop the white onion. Peel the celery stalk and dice it into small pieces. Cut the cherry tomatoes into quarters, removing the seeds and pulp, which you’ll blend into a smooth puree. The remaining tomato skins can be cut into small cubes for added texture in the final dish.

Heat a pan over medium-low heat and add 3 tablespoons of olive oil. Once the oil is warm, add the finely chopped onion and sauté until it softens and becomes fragrant. Add a splash of water (about ½ cup) and season lightly with salt. Let the liquid evaporate almost completely before adding the diced potatoes, celery, bell pepper, and carrots. Continue cooking for about 10 minutes, stirring occasionally, until the potatoes start to brown lightly. If the mixture begins to dry out, add another splash of water.

Next, add the chopped zucchini, the remaining herbs, salt, and pepper to the vegetables, stirring to combine. Let this cook for another 10 minutes until the zucchini is tender and the vegetables are infused with the herb flavors. Finally, add the tomato puree and stir to combine, allowing the sauce to thicken slightly.

Step 4: Set Up for Steaming

Now, prepare the steam. Fill a large pot with water and place a steaming basket or steaming rack inside. Add the lemon zest, bay leaves, and the sprig of rosemary to the water. Heat the pot on high and bring the water to a simmer, ensuring that the water temperature reaches 80-90°C (176-194°F).

Step 5: Steam the Salmon

Once the water is simmering, remove the salmon from the marinade and place it in the steamer basket. Make sure the salmon is placed evenly and not overcrowded. Cover the pot with a lid, and steam the salmon for about 10-12 minutes, or until the fillets are fully cooked and tender. During this time, the salmon will absorb the fragrant steam infused with lemon and herbs.

Step 6: Serve

Once the salmon is cooked, carefully remove it from the steamer and plate it. You can strain the marinade liquid and drizzle it over the salmon for extra flavor, or you can use it as a sauce for the vegetables. Serve the steamed salmon alongside the herb-infused vegetable medley.
