Ingredients

For the Muffin Batter:

Ingredient Quantity
All Purpose Flour (Maida) 2 cups
Caster Sugar 1/2 cup
Baking Powder 2-1/4 teaspoons
Milk (at room temperature) 1 cup
Whole Egg (or Flax meal Egg Replacer) 1 whole egg (or egg replacer)
Butter (Unsalted), melted 60 grams
Vanilla Extract 1 teaspoon

For the Strawberry Sauce:

Ingredient Quantity
Strawberries 200 grams
Caster Sugar 3/4 cup
Water 2 tablespoons

Preparation Time: 30 minutes

Cooking Time: 30 minutes

Instructions

  1. Preheat the Oven:
Begin by preheating your oven to 180°C (350°F). Line a muffin tray with muffin liners and grease them with butter to ensure easy removal of the muffins later.

  2. Prepare Eggless Option (Optional):
If you prefer to make this recipe egg-free, prepare the flax meal egg replacer. To make the replacer, mix 1 tablespoon of flaxseed meal with 3 tablespoons of water and allow it to sit for a few minutes until it thickens.

  3. Make the Strawberry Sauce:

    • Start by removing the green stems from the strawberries. Wash them thoroughly, then roughly chop them into pieces.
    • In a heavy-bottomed pan, combine the chopped strawberries, water, and caster sugar. Cook over medium heat for about 10 minutes until the sugar dissolves and the strawberries soften.
    • Allow the mixture to come to a brisk boil to evaporate any excess water, thickening the sauce to a honey-like consistency. Once done, set the strawberry sauce aside to cool.
  4. Prepare the Muffin Batter:

    • Sift together the flour, baking powder, and salt into a separate bowl and set it aside.
    • In a large mixing bowl (or the bowl of a stand mixer), cream together the caster sugar and melted butter until light and fluffy. Add the egg (or flax meal egg replacer) and beat again until the mixture is smooth and fluffy.
    • Gradually add the milk and vanilla extract to the butter mixture, followed by the sifted flour mixture. Mix until just combined, taking care not to overmix the batter.
  5. Assemble the Muffins:

    • Spoon about a tablespoon of the strawberry sauce into each muffin cavity, spreading it evenly across the bottom.
    • Then, carefully spoon the muffin batter on top of the strawberry sauce, filling each cavity about three-quarters of the way full.
  6. Bake the Muffins:

    • Place the muffin tray in the preheated oven and bake for 15 to 20 minutes. To check for doneness, insert a toothpick or cake tester into the center of a muffin. If it comes out clean, the muffins are ready.
    • Once baked, remove the muffins from the oven and let them cool for about 5 minutes in the tray.
  7. Invert the Muffins:

    • After the 5-minute cooling period, carefully invert the muffins onto a cooling rack so that the strawberry topping is facing up.
  8. Serve and Enjoy:
These delicious Strawberry Upside Down Muffins are now ready to be enjoyed! They are perfect for breakfast, brunch, or served as a sweet treat at your holiday gatherings. Pair them with a scoop of vanilla ice cream for an extra indulgence!
