Prepare the Pandoro Slices:
Begin by slicing the leftover Pandoro into 8 pieces, each 1 cm thick. Be sure to cut off the top cap of the Pandoro, as it is not needed for this recipe. Gently press each slice with a rolling pin to flatten it to a thickness of about 0.5 cm. -
Toast the Pandoro Slices:
In a small pan, melt the butter over medium heat. Once the butter is melted, place the Pandoro slices in the pan. Toast each side until golden brown and slightly crispy. The texture will become firmer and perfect for rolling. -
Form the Cannoli Shells:
While the Pandoro slices are still warm, carefully roll them around a cannoli tube (approximately 1 cm in diameter). Gently press the ends together to seal the roll, ensuring that the shape holds. Once all the slices have been rolled, place the cannoli on a tray and refrigerate them for about 15 minutes to firm up and set. -
Prepare the Cream Filling:
While the cannoli shells are chilling, make the creamy filling. In a mixing bowl, combine the mascarpone and fresh cream. Using an electric mixer, whip the ingredients together until smooth and fluffy. The consistency should be thick and light. -
Fill the Cannoli:
Transfer the mascarpone cream to a piping bag fitted with a star-shaped nozzle. Carefully remove the chilled cannoli shells from the refrigerator and gently slide them off the cannoli tubes. Fill one side of each cannoli with the mascarpone cream using the piping bag. Once one side is filled, take the Nutella® and, using a piping bag, squeeze it into the other end of the cannoli. -

Once all the cannoli are filled, place them on a flat surface. Dust them lightly with powdered sugar to add an elegant touch. For extra decoration, you can top the cannoli with finely chopped hazelnuts or chocolate shavings. -
